Blueberry Rosemary

This fluffy light cake flavored with blueberries and rosemary is such a delight.
Absolute easiest one-bowl recipe that you an whip up in no time

All you need is (love)

  • 300 gr flour

  • 16 gr baking powder

  • Pinch of salt

  • 350gr soyyoghurt you can use unsweetened or vanilla

  • 75 gr of any kind of sugar - i used coconutblossom

  • Zest of 1 lemon

  • 30 gr oil (i used avocado, olive or sunflower or any plant oil will do just as well

  • 20 gr dried rosemary

  • 150 gr fresh blueberries

  • 1 vanilla bean, or 1ts vanilla extract


Bruise the rosemary leaves and add oil*, sugar and stir. Then stir in the soyyoghurt. Add the vanilla bean or extract.

Add flour, baking powder, salt to the bowl. Whisk it with a fork until mixed. Mix again, roughly.

Fold in the blueberries, you can smash them a little. Mix roughly and add to your baking tray!


35minutes on 175 degrees celcius


There’s your perfect fluffy vegan loaf!


Want a glaze? Understandable! Mix powdered sugar with a little orange* juice and until a glaze forms, and then pour it over the cake. Add some zest on top for fancy shenanigans 🫶 *lemon is great, too!
