Blueberry Rosemary
This fluffy light cake flavored with blueberries and rosemary is such a delight.
Absolute easiest one-bowl recipe that you an whip up in no time
All you need is (love)
300 gr flour
16 gr baking powder
Pinch of salt
350gr soyyoghurt you can use unsweetened or vanilla
75 gr of any kind of sugar - i used coconutblossom
Zest of 1 lemon
30 gr oil (i used avocado, olive or sunflower or any plant oil will do just as well
20 gr dried rosemary
150 gr fresh blueberries
1 vanilla bean, or 1ts vanilla extract
Bruise the rosemary leaves and add oil*, sugar and stir. Then stir in the soyyoghurt. Add the vanilla bean or extract.
Add flour, baking powder, salt to the bowl. Whisk it with a fork until mixed. Mix again, roughly.
Fold in the blueberries, you can smash them a little. Mix roughly and add to your baking tray!
35minutes on 175 degrees celcius
There’s your perfect fluffy vegan loaf!
Want a glaze? Understandable! Mix powdered sugar with a little orange* juice and until a glaze forms, and then pour it over the cake. Add some zest on top for fancy shenanigans 🫶 *lemon is great, too!
